My family has always been pretty big on appetizers. We make a meal out of them. So, I will be breaking out some of my favorite Mexican appetizer recipes for the party. My favorite con queso recipe belongs to my friend Desi. Its so simple, yet so delicious...maybe I should ask her permission before I share, Desi? Its funny, whenever I mention con queso around my Edmonton peeps, they have no idea what I'm talking about. What is it called in Canada I wonder? Regardless, I will introduce them to the con queso. My staple guacamole comes from the mother-in-law. Full of garlic and jalapenos, seeded and diced tomatoes, red onion, lime and tons of avocado. My mouth is watering. Despite our love for appies, we are having two main courses for the evening. One of which will be this chicken enchilada recipe I found on Pinterest.

Ok, this is just a taste of what we will be bringing to the table. I will let you know how it goes! Friday will be a day spent in the kitchen prepping for the party, so I can actually enjoy myself on Saturday. An invaluable lesson I learned from my mother. Thanks mom!
