Cravings

Lately I've had some serious food cravings (sorry mom, I'm not pregnant). I can only imagine what those cravings would be like for me. Anyway, I have been going through jar after jar of pickled beans lately, but i realized it wasn't the salt or vinegar I was after, it was the dill. To spare my sodium levels, I bought some fresh dill and now eat it like candy. I have also been throwing ridiculous amounts of fresh parsley on just about everything I eat. Which is strange for me, I always liked parsley, but never loved it and certainly not in ridiculous amounts. My mom would be so happy, parsley is her most favorite food on the planet. And sun-dried tomatoes. I made a special trip to the grocery store to buy a bag of them and couldn't even wait to get home to dive into it. My mouth is watering just thinking about them. Conveniently, the latter two foods go really well together and for now, I have a new favorite meal. I named it after my mother because she has made versions of this meal my entire life.





The Pamela: a light pasta dish with a sauce of sun-dried tomato, shallot, fresh garlic and olive oil. Generous sprinkles of feta and parsley on top.

    I often see/eat Mediterranean-inspired dishes, and think of your mom, and how she could probably improve upon them.
