Sweet Success

So, I have been dying to try out this salted caramel recipe for a while now and today it finally happened.  I can't even begin to tell you how much I love caramels {actually caramel anything will do}.  I stole the recipe from Barefoot Contessa and you can find it here.  Of course, I had a few kinks to work out as it was my first time ever making caramels.  Naturally, my baking process looked nothing like Ina's baking process {as chronicled by photos on the recipe page}, so my expectations of these caramels were pretty low.  After it was all said and done...mind you her cooking time was 20 minutes, my cooking time was closer to about 90...the finished product was amazing! I didn't have the fancy French salt, now I'm not a salt connoisseur, but I would imagine any salt would do.  I went without and they were just as well.  If you follow her photos, you will notice her caramel slices were very large, and her yield was about 16 caramels.  I made smaller slices and doubled the amount of caramels {trust me, do that, then you won't feel so bad about eating more of them because they're tiny...at least that's what I'm telling myself}.
