Chewy Oatmeal Honey Cookies
Dry Ingredients:
1/2 cup whole wheat flour you can use all-purpose too, but its lacking on the "good stuff"
1 1/2 cups oatmeal adds beacoup protein and fiber
1/4 tsp cinnamon can actually help to speed up your metabolism, use more if you'd like!
1/4 tsp baking soda
1/2 tsp salt
Wet Ingredients:
1/4 cup brown sugar
1/4 cup honey an easy sugar for our bodies to handle
3 Tbsp room temp butter
1 Tbsp water
1 egg
Yield: About 25 cookies
Preheat oven to 350 F. Spray a cookie sheet with non-stick cooking spray.
Mix the dry ingredients well. Sift if you'd like, adding the oatmeal after. Set aside.
Mix the wet ingredients thoroughly. I used a fork to stir, no fancy mixers needed here.
Add the dry mix to the wet. Mix well. If you weren't bitten by the healthy bug, this is when you would add in all the good stuff like, chocolate chips, be creative.
Place heaping teaspoons onto the cookie sheet. Bake for 12-15 mins depending on the oven. The trick is to under cook them slightly, I baked mine for 13 mins and they turned out nice and chewy.
Of course you could pump up the nutrition value by adding flax, wheat germ, or walnuts, but I was having one of those "I need a cookie NOW" moments and just couldn't be bothered running out to the store. I was very pleased with how they turned out and so was the rest of the house, two batches in two days! Try them out.
And if you are wondering what those little chunks of goodness are...well, I added butterscotch chips...don't judge, I am only human. And they were fantastic!
